Summer Chicken Salad


Sweet, savory, crunchy and refreshing

My mom's super simple chicken salad recipe is sure to entice and keep you refreshed as the hot, muggy days of summer creep upon us.  This little dandy of a concoction is a good use of leftover chicken and will keep in the fridge for 2-3 days after you mix it.   Sweet red grapes, crunchy walnuts, refreshing celery and the tummy-filling quality of chicken will leave you satisfied after an afternoon at the pool or beach. Yum!  


INGREDIENTS
1-1/2 C. Chopped or shredded chicken (can use canned chicken in a pinch)
3/4 C. Chopped celery (about 2-3 stalks)
3/4 C. Red grapes
1/4 C. Walnuts
3/4 C. Mayo or dressing
1/2 t. Salt
1/4 t. Pepper

UTENSILS
Medium sized bowl
Stirring spoon
Chopping knife
Cutting board


DIRECTIONS
1. Chop roasted chicken (or shredded chicken) into bite-size pieces.  Toss into bowl.


2. Add chopped celery and halved grapes.


3. Roughly chop walnuts and add to bowl.


4. Mix in mayo, salt and pepper.  Season to taste.  Bon Apetit!

Remember: All ingredients can be adjusted to suit your preference...like grapes? Add more! Not a fan of walnuts?  Leave 'em out!
